The  Chequers Champagne

The Chequers is proud to sell exclusively Maison Bollinger Champagne.

Bollinger is a Champagne house, a producer of sparkling wines from the Champagne region of France. They produce several labels of Champagne under the Bollinger name, including Grand Année and R.D. as well as the non-vintage Special Cuvée and Rose. Founded in 1829 in Aÿ by Hennequin de Villermont, Paul Renaudin and Jacques Bollinger the house continues to be run by members of the Bollinger family.

Whether a celebration, a treat or simply to taste the magic of their champagnes we have 4 for you to consider:

Ayala Majeur Brut
An elegant yet full-flavoured Champagne with a deliciously frsh mousse.  The aromas are both floral and fruity with notes of jasmine, red apples and toasted brioche.
Bollinger Special Cuvée
The expression of the Bollinger house style.  This classic Champange blend uses grapes from a given year, with the addition of reserve wines .  Champagne author Tom Stevenson describes the house style as "classic, Pinot-dominated Champagnes of great potential longevity and complaxity" which "tends to go toasty."  The blend includes up to 10% reserve wines, which may be up to fifteen years old.  This gives the special cuvee complexity and structure. (Composition: 60% Pinot Noir, 25% Chardonnay, 15% Pinot Meunier.)
Bollinger Rosé

This special non-vintage rose is the first wine to come from Bollinger for more than 30 years - in the seventies the Bollinger La Grande Annee rose was introduced.  This non-vintage model has been modelled on its Special Cuvee blend, combining the fruits of the previous harvests with reserve wines from the cellas in Ay.  The final component- which provides the pink colour and delicate aromas, is the propoertion of still red which comes from Bollinger's Grand Cru vineyards.

Grand Année (vintage)
When Bollinger believes there is an exceptional harvest, they will produce their prstige Champagne Grand Année ("great vintage") designed to express the character of the vintage.  The house will select the best wines, cru by cru, to produce Grand Année.  This champagne is laso available as a Rosé.  The wine spends five years on its lees and is aged in bottle under cork, instead of crown seal. (Composition: 65% Pinot Noir, 35% Chardonnay, 0% Pinot Meunier.)
Dessert Wine
Concha y Toro Late Harvest Sauvignon Blanc(half bottle) Chile
This is a rich, delicious and enticing dessert wine.  Soft and fruity with honey pervading through the finish.  Lightly sweet and palate cleansing.
